PFAS-Free Cookware Worth a Look

PFAS-free and PTFE-free are not the same claim as PFOA-free. Here are 15 ceramic, hybrid and carbon steel pans, and exactly what each maker says its surface is made of.

Most nonstick pans have been made the same way for decades: a fluoropolymer coating, usually PTFE, sprayed over aluminum. It works, and it is the reason your eggs slide. It is also the reason a lot of people have started reading cookware boxes much more carefully.

The good news is that the alternatives have become genuinely good. Ceramic coatings, hybrid stainless surfaces and plain carbon steel all cook well now, and the better ones tell you exactly what they are made of. Here is what is worth a look, grouped by how each one solves the problem — and what each maker actually claims, in its own words.

Coating type

Three answers dominate the shelf. A sol-gel ceramic coating is a silica-based layer with no fluoropolymer in it. A hybrid pan raises a laser-etched steel lattice above a coating, so the steel takes the abuse. And bare carbon steel has no coating at all — it builds its own slick surface from cooked-in fat.

What the label claims

PFAS is the umbrella: a large family of synthetic fluorinated compounds. PTFE, known to most people by the Teflon brand name, is one member. PFOA and PFOS are two more, both phased out of cookware years ago — which is why “PFOA-free” now appears on nearly everything, including pans still coated in PTFE. The wording worth looking for is PFAS-free or PTFE-free, which covers the whole family rather than two retired members of it.

Heat and utensils

Ceramic coatings prefer low and medium heat; high heat is what dulls them fastest. Hybrid pans are built to take metal utensils, which is much of their appeal. Carbon steel is indifferent to both — it wants high heat and will not care what you stir it with.

How long it lasts

This is the honest trade-off. A ceramic surface gives up its slip sooner than a PTFE one, often within a couple of years of regular use, and no ceramic pan is a lifetime purchase. Carbon steel runs the other way: it is the only option here that gets better the longer you own it.

Ceramic Nonstick

Sol-gel ceramic is the mainstream answer — slick from the first use, with no fluoropolymer underneath. Two picks lead, and six more are worth a look.
